Allergies

Involve the IgE immunogloblin in the immune system, and instigate almost immediate symptoms upon exposure to the ‘allergen’. Minute amount of the allergen are enough to instigate a reaction.

Sensitivities

Do not involve the IgE, so often fly under the radar on medical allergy tests. Symptoms can take up to 48-72 hours to develop, and often only occur once you’ve consumed over your ‘tolerance threshold’.

Intolerances

The term intolerance is used interchangeably for reactions due to issues digesting a food/food chemical (eg. salicylates), as well as intolerances due to enzyme deficiency (eg. lactose intolerance).
